The recipe was given to me from my friend John's mom, Libby, who is Greek. I think the key is using a combination of cottage cheese and feta. The cottage cheese lightens it up a little, not that it's a light dish!😂 I often use frozen/defrosted spinach but in this video I used steamed/fresh spinach and squeezed excess water out. If I make this for entertaining, I try to prep the spinach-feta mixture the day before and refrigerate it. I have strong feelings about feta and encourage you to buy feta made with goat and/or sheep milk (not cow) and not pre-crumbled for best flavor and quality. Want the recipe?
