Blueberry Muffin Mug Cake Recipe

Fluffy like our pancake in a mug, and just like when you bake them in the oven. You’ve got to try our latest one here and let us know what you think! We love this recipe. My youngest daughter came up with muffin in a mug recipe and it was fun experimenting with it. It took a few trial and errors until this blueberry in a mug recipe was born. A perfect little treat she can make all by herself.

Can you microwave regular muffin mix?

Yes, we have even made Instant Pot blueberry muffins with it. I love boxed Krusteaz brand mixes. If you make the batter as directed you can use that instead. Still spray the inside of your mug and only fill 1/3 way full. Then you can follow the same timing below and adjust as necessary since the amount you add may be slightly different. Test with a toothpick in the center and add 30 more seconds until it comes out clean.

How much time will it take in a microwave to bake muffins?

2-3 minutes depending on how much batter you are cooking at a time. If you are using a large mug, only fill 1/3 of the way full or it won’t cook all the way thru. Microwaving 1-2 mug fulls at a time will give you the best results.

Can you bake blueberry muffin in the microwave without a mug?

Yes, we’ve done this with banana bread in a mug but in silicone baking cups, those are great for this. Set a few on a plate in case there is a little overflow. Pour the batter into microwave-safe silicone muffin cups or a microwave-safe muffin pan, filling each cup about two-thirds full. Use medium high setting at 70-80% power to avoid overcooking the edges while the center remains undercooked.

Once again, typically, it takes about 2-4 minutes to cook a muffin in the microwave. Start by microwaving for 2 minutes, then check adding 30 seconds if they aren’t done. Great as zucchini blueberry muffins too.

If you’ve never made a mug muffin recipe for microwave it’s really quite simple. Just mix the dry ingredients together in your mug, add your wet ingredients, mix the batter and then stir in blueberries.

Ingredients

  1. All purpose flour, I haven’t made this with wheat flour, and unsure it would work since it is much more dense
  2. Brown sugar creates a deep sweet
  3. Sugar too
  4. Baking powder allows it to rise
  5. Butter or a dairy free plant based alternative works
  6. Vanilla extract, just a bit
  7. Milk – 2% or whole is best or it will be a bit dry, almond milk could be used too
  8. Fresh blueberries are best 

Equipment Needed

You will need a rather large microwave safe mug or else it will overflow and a spoon to mix everything together to make a batter.

Variations

I haven’t used frozen blueberries but I suppose you could. I would defrost them first though. You could add a bit of crumb topping for muffins on top too.

How do You Make a Muffin in a Mug

Time needed: 2 minutes

Blueberry in a Mug

  1. Mix

    In a small dish melt your butter in the microwave for 30 seconds. In your mug stir together the flour, sugar, brown sugar, and baking powder well. Pour in your melted butter, milk, and vanilla and stir so you have batter and no powder is left. Gently fold in your fresh blueberries.

  2. Microwave and cook

    Put into the microwave for 2 minutes. Eat immediately for best results!

What’s nice about this microwave muffin recipe in a mug is that it is egg free and requires no baking which makes it a great easy rv meal for a quick and easy dessert recipe too.

I mean if you are comfortable nuking food in general then this is really no different. You can bake in a microwave using muffin batter in silicone cups for about 2 minutes. Cooking cookie dough in a microwave actually works too! One at high power for 40-60 seconds works great, add 10 seconds if you want it firmer.
