While I like the idea of the current enchantment combo, I don't know that it's really necessary. Privileged Position already protects your stuff without the need to get out 2 cards. Further, turning all of your lands into enchantments opens you up to instantly losing the game to something like Spring Cleaning, although players are more likely to play mass wipes that will also destroy or exile their permanents due to Enchanted Evening's symmetry. Speaking of, you can try to take advanatge of that symmetry in other ways like playing Azorius First-Wing as an unblockable griffin, assuming you don't mind going into blue. Otherwise, I'd still try to upgrade the griffins here to be a little faster and more impactful. Diving Griffin and Resplendent Griffin have the potential to be better than Sunspire Griffin, depending on the final build. Fearless Fledgling and Griffin Rider are both aggressive options to shore up the 2 slot in a way I think would be more impactful than Crashing Drawbridge or the currently underwhelming Pearl Medallion. Finally, Wanted Griffin may be better than Senate Griffin at 4, again depending on what your game plan ends up being. Mutavault and Metallic Mimic are some less budget friendly options that could help the tribe's limited card pool.
As for anthems, I usually prefer the 2 cost options to the 3, although I do like Always Watching. Honor of the Pure is the vanilla option while Rally the Ranks or even Obelisk of Urd could fit in a tribal shell. One thing I thought of while looking at the high number of white pips making the Medallion worse was that you could lean into that and go for a mono-white devotion build. Some anthems like Flowering of the White Tree and Benalish Marshal already fit well in such a deck. You'd definitely want a playset of Nykthos, Shrine to Nyx and some sort of payoff for the extra mana like Elesh Norn, Grand Cenobite, Walking Ballista, or whatever other bomb you prefer. You'd also want something to play on 1 for that strategy. War Falcon has some synergy with Griffin Rider, Esper Sentinel is a generically powerful draw engine, and Weathered Wayfarer is a classic way to find Nykthos. War Falcon also brings to mind the idea of leaning more into broad flying support like Sephara, Sky's Blade and Rally of Wings, although I acknowledge going down that path could severely dilute the tribal identity of the deck. One final approach I can think of is pivoting to focus on lifegain to use the Griffin Aerie in your maybeboard. You'd definitely need cheaper ways to gain life than True Conviction, especially since I think it's already one of the weaker cards in the deck. The reality is that you'd probably be nudged towards splitting the griffins with angels to take advanatge of Angelic Accord, Bishop of Wings, Speaker of the Heavens, and even Archangel of Thune. Outside of that, the options are more limited. Maybe mass lifelink could be made cheaper with Metallic Mimic plus Envoy of the Ancestors or Abzan Battle Priest. This is the only route where I actually see Path of Bravery being worth it.

Thanks for calling on me! I'll give you a little pile of recommendations here, take in mind your pod, budget, and playstyle as you consider these.
On finishing out the game at Haste speed, Concordant Crossroads is a reliable way to do that in Green. The downside is you might Cascade into it and give your opponents Haste and make it targetable before you've reached critical mass. Crashing Drawbridge is a more one-sided creature version of this - nice Haste enabler but has some definite downsides, it's very vulnerable to removal being an Artifact Creature, and it has summoning sickness itself.
Brinelin, the Moon Kraken could be useful for removing problematic blockers or combo pieces, to clear the way for you to get more damage in sooner. Repeatible removal like this can also be very demoralizing for opponents.
Also, this deck might have a use for the spell Time Stop, to end a problematic opponent's turn on their upkeep while ramping or generating a body that you can swing with on your next turn. Pretty good deal.
Have you thought about adding Krosan Drover for ramp? It would reduce the value of ~14 cards. There's also Thryx, the Sudden Storm. Might even want to consider Zendikar Resurgent for ramp and card replacement. Thunderous Snapper and Up the Beanstalk also give great card replacement, especially if you Cascade into a MC>4 spell.
Thunderfoot Baloth will allow you to finish out the game faster with its Trample and +2/+2 anthem effects. Craterhoof Behemoth is another example of this. In this deck, Shark Typhoon will generate big evasive bodies that can rack up damage fast.
Once you get some Cascade online, the card Selective Memory could be used to thin your deck of the nonland cards you don't need, so your Cascades are always hitting big stuff (or whatever you need in that game at that moment.)
A huge gas piece you are missing here is Scroll Rack. You can use this card to literally stack your deck with the cards you want to Cascade into, in order. So if you're going to cast an 8-drop from hand, use Scroll Rack to put your 7- and 6-drops down in that order, get two free and predictable casts.
Speaking of explosive Cascades, have you considered Jadzi, Oracle of Arcavios Flip? She and Imoti could have some pretty devastating chains. If you ignore all my other suggestions and add only one card, make it Scroll Rack - if you add a second, make it Jadzi.

I have a G/B 60 card sac deck, and here are a few things that have been really good in that deck. Not sure if all will work for yours, but figured I'd throw out a few cards : )
Crashing Drawbridge I love giving big pay off creatures haste and if you don't need it then it's a sac target.
Eradicator Valkyrie Hits each opponent for a sac and can snowball by itself
Nether Traitor the sac you can always sac : )
Neverwinter Dryad is another tribe elder kinda
Storrev, Devkarin Lich is pretty great
Deadly Dispute such a great value engine and works awesome with things like Shambling Ghast
Tragic Slip is one of the best 1for1 removal spells in a deck where things are consistently dying around the table
Braids, Arisen Nightmare can be a very strong value engine
Rankle, Master of Pranks hits with haste early and can really shape the table
Bitterblossom can create a good stream of tokens to sac

Deck looks really fun, and as somebody who runs a mono white deck a lot, this list looks awesome : )
I have a few suggestions, just because you were asking about making this as competitive as possible.
You could probably get away with running more utility lands, stuff like War Room or Roadside Reliquary are nice when you just need to draw something, and I like Blast Zone a ton because it's always something you can sink some mana into and when it goes off it's amazing. Treasure Vault can be kinda similar where you can sac a little efficiency and get an amazing turn.
Dowsing Dagger Flip is a great equip and you have lots of attacking and evasive creatures, so might be awesome.
Concerted Effort could be an absolute bomb, giving all your guys double strike, flying, or protection. Effort and Mother of Runes are so great together.
For max cometitiveness, I think about a Phyrexian Dreadnought and Tocatli Honor Guard or Hushwing Gryff package, just because dreadnaught is such a crazy toxic target, and honor guard can even be tutored off Pyre of Heroes and Mother of Runes or Alaborn Zealot. Zealot also works well with protection because you can pro her from her own destruction, and really, worst case she is just a 1mana protection from attacks. It's a convoluted combo for sure, and I'd only do it because I have a few dreadnaught copies from back in the day, he is way too expensive now : ) Also, things like Hushbringer can just be great stax pieces on their own.

And I really like Crashing Drawbridge in any attack focused deck, just for the haste, but sometimes to have a big butt blocker too.

NV_1980 thanks! Cavern of Souls is one I had not considered yet. Not being countered is important though the balance between utility lands and the number of swamps is tough for this deck. Perhaps a land that could replace Thespian's Stage.
As for the haste enablers, Crashing Drawbridge could come in handy for repeatable haste and a decent blocker. One set of boots has been functional as of now but another could help out.

Interesting deck; +1!
Adding some more hexproof (Swiftfoot Boots) to protect Phage and some more haste enablers (Crashing Drawbridge) so she can attack on arrival, probably wouldn't hurt. Also, I would consider Cavern of Souls to deny your opponents the opportunity to counter her.
